- 2 pcs Eggplant
- 200 g Feta cheese
- 200 g Tomatoes
- 20 g Parmesan
- 1 Basil
- 2 tbsp Olive oil
- 1 pcs Onion (smaller)
- 2 pcs Garlic

Steps
Cut the eggplant lengthwise into 2 halves. Score a crosshatch pattern into both halves.
Drizzle the eggplant with olive oil and place it in a preheated oven at 200 degrees for 30 minutes.
Meanwhile, prepare the tomato mixture in a pan. First, sauté the onion until golden. Add the garlic and tomatoes. Stir for about 10 minutes.
After half an hour, take the eggplant out of the oven and spread the tomato mixture over it. Add the crumbled feta cheese and sprinkle with grated parmesan. Return it to the oven at 200 degrees for another 10 minutes.

Garnish with basil and serve warm.
