- 2 l Milk
- 2 tsp Salt
- 800 g 16% sour cream
- 6 pcs Eggs

Put 2 l of milk and 2 tsp of salt into a large pot.

Let the milk come to a boil.

Then SLOWLY add 800 g of 16% sour cream (or higher %) to the boiling milk, which you have whisked well with 6 whole eggs.

Stir everything together for about 10 minutes.

You will see lumps forming and whey separating from the milk.

Then take it off the heat and pour the mixture into a sieve lined with cloth.

The total weight should be around 800 g of cheese.
