White sponge batter

  • 5 pcs Egg
  • 130 g Sifted semi-coarse flour
  • 130 g Granulated sugar
  • 15 g Baking powder
  • 1 pcs Pack of vanilla sugar
  • 2 tbsp Oil
  • Pinch of salt
  • 3 tbsp Water

Pink sponge batter

  • 5 pcs Egg
  • 130 g Sifted semi-coarse flour
  • 130 g Granulated sugar
  • 1 pcs Pack of vanilla sugar
  • 15 g Baking powder
  • Pinch of salt
  • 1 tsp Pink food coloring
  • 2 tbsp Oil
  • 3 tbsp Water

Syrup

  • 250 ml Water
  • 150 g Granulated sugar
  • Punch pyramids
  • 1 tsp Pink food coloring
  • Juice of 1 orange
  • Raspberry syrup

Glaze

  • 300 g Powdered sugar
  • 50 ml Water
  • 10 ml Rum
  • 1 tsp Pink food coloring

For brushing

  • Raspberry jam

Preparation of the white sponge batter

As the first step, take 5 eggs and separate the yolks from the whites.

Put the whites of 5 eggs into a larger bowl and add a pinch of salt.

Whip the whites into a foam.

Then take 5 yolks, add 130 g of granulated sugar to them and whip a foam.

Gradually add the whipped whites and 130 g of sifted semi-coarse flour to the whipped yolks (+ 2 tbsp of oil and 3 tbsp of water).

Add 15 g of baking powder.

Mix everything well, gently and with love.

Pour the batter onto a tray lined with baking paper.

Bake the batter for 15-20 minutes at 180 degrees Celsius.

(Preparation of the pink sponge batter)

Add 250 ml of water to a pot.

Add 150 g of granulated sugar, raspberry syrup, the juice of 1 orange and 1 tsp of pink food coloring to the water.

While stirring constantly, bring it to a boil and turn off the stove.

(Assembling the layers)

Take all the bases and cut them in half.

Spread a layer of jam onto the top of the white base.

Place the pink base on the jam-spread white base and pour the syrup over it (carefully, using a spoon or spray), repeat twice.

Place the white base spread with jam onto the pink base, so the jam touches the pink dough.

Place a second tray on top of the slices and add a weight.

Let the slices rest in the fridge overnight.

Glaze

Sift 300 g of powdered sugar.

Add 50 ml of water + 10 ml of rum to the sugar.

Add 1 tsp of pink food coloring.

Blend everything well with a mixer.

Spread the glaze onto the punch slices.

Add decorations on top of the glaze (to your own taste).
