Meatloaf
- 2 pcs Bread rolls
- 250 ml Milk
- 20 g Chives
- 200 g Gouda cheese
- 3 pcs Eggs
- 1 tsp Ground black pepper
- 1 tsp Salt
- 1 kg Ground meat
- 0.5 tsp Ground nutmeg
- 1 pcs Bay leaf
- 3 pcs Whole allspice
- 1 tsp Ground caraway
- 2 tbsp Oil
- 2 tbsp Lard
- 1 pcs Onion
Horseradish sauce
- 50 g Butter
- 2 tbsp Flour
- 500 ml Broth
- 100 g Horseradish
- 250 ml Whipping cream
- 1 tsp Salt
- 1 tsp Sugar
- 1 tbsp Vinegar
Postup prípravy
Steps
First, soak 2 bread rolls in 250 ml of milk and let them soak through well.
Put 200 g of finely chopped Gouda into a larger bowl and add 3 eggs, ground black pepper (to taste), salt, 1 kg of ground meat and 1/2 tsp of ground nutmeg.
Finely chop 20 g of chives and add them to the other ingredients in the bowl.
Mix everything well and, if it is too runny, add a little breadcrumbs.
Put lard and plenty of onion into a pan.
Form two meatloaves from the meat and place them in the pan.
Add a bay leaf, whole allspice and sprinkle with ground caraway.
Brush the top with oil, pour in about 100 ml of water and bake covered for 40 minutes at 180 degrees Celsius.
Then finish baking uncovered at 200 degrees Celsius until golden.
Make a light roux with the butter.
Pour the broth over it.
Add plenty of horseradish and cook briefly.
Then add one whole 250 ml of whipping cream and cook briefly.
Finally, season the sauce with salt, sugar and vinegar.
