Basic ingredients

  • 250 g All-purpose flour
  • 250 g Semi-coarse flour
  • 23 g Fresh yeast
  • 270 ml Lukewarm water
  • 1 tsp Sugar
  • 1 tsp Salt
  • 3 tbsp Oil

For brushing

  • 2 pcs Egg yolks

For the top

  • 1 tbsp Sesame

Steps

Sift 250 g of semi-coarse and 250 g of all-purpose flour into a larger bowl.

Crumble 23 g of fresh yeast into a glass with 270 ml of warm water (not hot) and add 1 tsp of sugar.

Mix the water with yeast very well and let it rest for about 10 minutes, until a slight foam forms on top of the glass (that is how you know the yeast has reacted properly).

Add 1 tsp of salt and 3 tbsp of oil (either sunflower or vegetable) to the bowl with the sifted flour.

Next, add the previously prepared starter to the bowl.

You can knead all the ingredients by hand (personally I prefer this over a mixer) or use a kitchen robot.

If the dough seems too runny, add more SIFTED flour.

Once the dough is ready, dust it with all-purpose flour (a little, so it does not stick while rising) and cover the bowl with the dough with a kitchen towel.

Put the bowl with the dough into a TURNED-OFF oven (or one preheated to 30-50 degrees) for 60 minutes so it rises nicely in peace.

Once the dough has risen, put it on a work surface (you can knead it a few more times by hand).

Divide the dough into parts (each part should be 90 g).

Shape these parts into a circle and place them on a tray lined with baking paper.

As a next step, make a cross on each piece of dough using a small knife or another kitchen tool.

Cover the tray with the kaiser rolls with a kitchen towel and let them prove for another 20 minutes in the turned-off oven.

Meanwhile, crack one or two eggs, separate the whites from the yolks (use only the yolks) and beat them well with a fork.

Take the tray out of the oven and brush the kaiser rolls with the beaten yolks.

Sprinkle the kaiser rolls with sesame (to taste).

Put the kaiser rolls to bake in the preheated oven for 20-25 minutes at 180 degrees Celsius.

Watch the crust (if it is brown, you can take the kaiser rolls out of the oven).

The last step is serving (butter, ham and vegetables 😂).
