Dark batter

  • 6 pcs Eggs
  • 200 g Granulated sugar
  • 4 tbsp Warm water
  • 150 g Semi-coarse flour
  • 2 tbsp Cocoa
  • 1 pcs Baking powder

Walnut batter

  • 5 pcs Egg whites
  • 250 g Ground walnuts

Cream no. 1

  • 5 pcs Egg yolks
  • 200 g Powdered sugar
  • 250 g Butter/Hera

Cream no. 2

  • 350 ml Milk
  • 1 pcs Vanilla pudding
  • 3 tbsp Granulated sugar
  • 2 pcs Vanilla

Coating

  • 100 g Dark chocolate
  • 25 g Butter

Steps

Put 6 eggs, 200 g of granulated sugar, 4 tbsp of warm water, 150 g of semi-coarse flour, 2 tbsp of cocoa and 1 baking powder into 1 large bowl and mix everything well.

Bake on a 25×34 cm tray at 180 degrees Celsius for about 30 minutes.

Cut the cooled base lengthwise in half so you have 2 sheets.

Whip 5 egg whites into a stiff snow, add 250 g of ground walnuts.

Mix and bake on a dusted 25×34 cm tray.

Bake at 180 degrees Celsius for about 25 minutes.

Let it cool.

Whip 5 egg yolks and 200 g of powdered sugar in a water bath until thickened and let it cool.

Add 250 g of butter and mix well (blend).

Put 350 ml of milk, 1 vanilla pudding, 3 tbsp of granulated sugar and 2 vanillas into a pot and cook a thick custard.

Let it cool.

Combine both creams and mix the filling until smooth. Spread half of the filling onto the bottom dark base (1 sheet), then place the walnut base and spread it with the remaining filling. Finally, place the remaining dark base (2nd sheet). Press down and coat with chocolate. Melt 100 g of dark chocolate and 25 g of butter/Hera in a water bath and coat the whole cake with the chocolate coating. I make the chocolate coating this way so the cake does not crack when cutting. Let the cake set well.
